Bombay Special Briyani

      Ingredients

  1. Bombay Briyani Masala (Shan)
  2. Dahi(Yogurt) 200 g
  3. 2medium potato chop,3 medium size tomato & Onions,2 tablespoon of ginger and garlic paste.
  4. Basmati rice 750 g

     Steps

  1. Soak the Basmati for 40 min and keep aside meanwhile
  2. Fry  1/2 of the chop onions in hot pan until Golden Brown and take out in a bowl for later used.
  3. Heat the pan  with oil and fry the remaining onion till it turn golden and add tomatoes and fry until the oil separates.
  4. Add meat ,garlic paste, ginger paste , yogurt,potatoes and Shan Bombay Briyani masala mix. Stir fry for 10 minutes .Add Water, Chicken/lamp, Cover cook on low heat until the meat is tender, then increase heat and stir fry till the oil separates.
  5. Separately:  In 15 cups / 3 liters of boiling water ,stir in 3 tps. of salt  and soaked rice.Boil rice until 3/4 cooked.Remove and drain thoroughly.
  6. Spread some portion of the rice in a pot and pour meat curry  and Top with some portion of rice and add the golden brown fried onions and repeat the process till the items are over.
  7. Cover Pot and cook on low heat intil rice is fully cooked (5-10 min).Mix before serving.

HYDERABADI BRIYANI


HYDERABADI BRIYANI














Let me share how we can easily prepared hyderabadi briyani which is one of the famous dishes of south India  at your home.


Quantity is refered for 5 members
  RECIPE
  • .500gm of basmati rice and 500gm of chicken(2 -3 leg piece included)
  • Chop 300gm of tomatoes(3 normal size tomato).
  • Grind 50gm of garlic(1 and half  piece of garlic).
  • Chop 400gm of onion(4 normal size onion).
  • Chop20gm of green chillies.
  • 5gm of dry red chilly(3 pieces of dry chilly)
  • Grind 50gm of ginger.
  • Chop10gm of coriander leaves.
  • 4 pieces of big elaichi(or 5 small elaichi).
  • 1tsp of red chilly powder
  • 2tsp of  turmeric powder.
  • 1tsp of  cumin seeds (jeera).
  • 6 pieces of dry cloves(lawong).
  • 5 pieces of cinnamon sticks( Dalchini)
  • 3 piece of Malabar leaf(Tejbata leaf).
  • 5tsp of oil.
  • 2tsp of garam masala.
  • salt for taste..

HOW TO PREPARED HYDRABADI BRIYANI

   Step-1:
    Boil the chicken in a pressure cooker upto 5 whistle  adding 3 cup of water ,1tsp of turmeric  powder,1/2tsp of chilly powder ,1/2 tsp of salt,1tsp of garam masala.

   Step-2:
  Take out the boil chicken from the cooker and  take out the soup of the boil chicken in a different container .Wash the basmati rice filter it and keep aside in a separate container
 Step-3:
Add the 5tsp of oil  into the 2litre pan(karaih) and heat it  on the gas stop for 2 min. Then add Chop onion , grind garlic and ginger and chop green chillies and  fry it till it turn brownish .
Then add red chilly,malbar leaf,cinnamon sticks,cloves,big elaichi,cumin seeds and fry it for 5 min, after this add 1/2 tsp of chilli powder,1tsp of turmeric powder,1tsp of garam masala and tomato and fry it for another 5min.
Step-4:
Now add the soup of the boil chicken  into the pan (karaih) and stired it and  keep it till boil.
Step-5:
After the soup is boil add the wash basmati rice into the pan and stired it for a while .now check the water for the basmati rice to be properly cook.
Step-6:
Add the boil chicken and salt (as required  for the taste) and stiered it once. now close the pan (kariah ) air tight with a metal plate. and reduce the flame of the gas stove. check after 15 min for thw basmati rice to cook..once the basmati rice is cook..your briyani is ready.
Step-7:
After the basmati rice is fully cook off the gas stove and spray the chop coriander leaves on the top of the briyani .Serve Hot.
